Beer without yeast is nothing more than sugar water. Yeast is one of those things that is in the air, it is on our cloths, it grows wild. Louis Pasteur discovered that yeast was the secret ingredient that had been making beer for 10,000 years. Scientist now have cultured and identified hundreds of strains of yeast for beer. Yeast is what turns sugars into alcohol and CO2. Yeast also gives beer different flavors and aromas. Here's hoping that when a craft beer consumer understands yeast it make consuming a delicious beverage more fun.
